Someone gave me some of this fish. I’ve never cooked it before, so I have no idea what to do with it. It’s already cut into medium/large sized fish steak pieces. I really would like to bake it, but I can fry or broil it. I’d appreciate any recipes or tips. Also, what is the flavor like and does it have a lot of bones? Thanks.

INGREDIENTS
* 1/2 cup white wine
* 2 tablespoons brandy-based orange liqueur (such as Grand Marnier®)
* 1 tablespoon grated fresh ginger root
* 1 cup hollandaise sauce
* 1 tablespoon frozen orange juice concentrate, thawed
* 8 (3 ounce) fillets yellowtail flounder
* 4 tablespoons orange juice
* 8 pinches dried thyme
* 8 teaspoons butter
DIRECTIONS
1. In a small saucepan over medium heat, combine the white wine, Grand Marnier, and grated ginger. Bring to a boil, and reduce the mixture by one half. Strain, and set aside to cool slightly. Whisk the reduction into the hollandaise sauce, and mix in orange juice concentrate.
2. Preheat your oven’s broiler. Place the filets onto a baking sheet, and dot each one with one teaspoon of butter, sprinkle with a pinch of thyme, and drizzle with 1/2 tablespoon of orange juice.
3. Broil the fillets for 3 to 5 minutes, or until just barely done. Fish should be opaque and flake with a fork. Ladle sauce onto plates, and place yellowtail fillets onto sauce.

BBQ with soy and sesame seeds. (15-30min marinade)
Fry 8 min. med heat, add teriyaki sauce fry 5 more.
Or: 2 tablespoons canola oil
1 teaspoon hot chile (sesame) oil
2 yellowtail fillets*
sea salt
sesame seeds
Directions:
In a large pan, heat the oils. Sprinkle the fish with the fish the salt and sesame seeds. Cook the fish for 30 seconds on each side. Remove from heat and slice.

Baked Yellowtail with Creole Sauce
1-pint whole milk
1- 1 ½ pound yellow tail snapper
prepared Cajun seasoning
2 cups Creole sauce
Soak snapper in milk for 30 minutes, drain well. Cut 3 slits ¼ in deep on both sides of snapper. Season well, with Cajun seasoning. Place seasoned fish in ovenproof pan and ladle Creole sauce over. Cover with lid or foil and bake at 350 degree for 30 minutes. Remove whole fish using large spatula and place on platter, spoon remaining sauce over fish and serve with white rice and mixed vegetables.
Easy white fish recipe: Throw on garlic powder, salt, pepper, and olive oil and broil it or in a pan. You can also add herbs and lemon if you’d like.
